This work was focused on production of hydrolytic enzymes (mainly protease and lipase), including proposal of suitable culture medium from waste sources. Enzymes were produced by strains Aureobasidium pullulans, Aspergillus oryzae and Phanerochaete chrysosporium. The aim of this work was also to compare possibilities of stabilization of produced enzymes. As a way to improve enzyme stability have been investigated encapsulation techniques.
