Originální abstrakt

This work was focused on production of hydrolytic enzymes (mainly protease and lipase), including proposal of suitable culture medium from waste sources. Enzymes were produced by strains Aureobasidium pullulans, Aspergillus oryzae and Phanerochaete chrysosporium. The aim of this work was also to compare possibilities of stabilization of produced enzymes. As a way to improve enzyme stability have been investigated encapsulation techniques.

Práce byla zaměřena na produkci hydrolytických enzymů (především proteázy a lipázy), včetně návrhu vhodného kultivačního média za použití odpadních zdrojů. Enzymy byly produkovány plísňovými kmeny Aureobasidium pullulans, Aspergillus oryzae a Phanerochaete chrysosporium. Cílem práce byla také stabilizace produkovaných enzymů. Ke stabilizaci enzymů byly využívány enkapsulační techniky.
