  4. Mycotoxins in brewing raw materials

    Mycotoxins are secondary metabolites roduced by an organism of the fungus kingdom, including mushrooms, molds, and yeasts. They are toxic for plants as well as for warm-blooded animals including human. They represent very wide group of compounds with relative molecular weight usually below 500 Da. More than 300 of mycotoxins have been described till now, but only some of them occur naturally and more frequently in higher concentration levels in foodstuff. Five compounds from this group are important from the point of view of the human health in a worldwide scale: aflatoxins, ochratoxine A, fumonisines, trichothecenes and zearalenone. The most important mycotoxins are produced by fibrillar fungi of Aspergillus, Penicilunum and Fusarium species. Within the range of this work the occurrence of above mentioned mycotoxins together with fusarium ones in brewing raw materials, especially in malting barley. The possibility of the transfer of mycotoxins to individual intermediates during brewing and to finished beer will be also evaluated.
