Introduction: Recently, the interaction among phenolic compounds and probiotic bacteria viability has been studied. On one hand, some phenolic compounds show naturally occur antimicrobial activity against pathogens present in human guts. On the other hand, these compounds can enhance probiotic viability even during human digestion. Combination of selected green superfood extracts and probiotic bacteria can be a tool to protect human gut health. Materials & Methods: This work deals with characterisation of prepared green superfood extracts. Spectrophotometric methods were used to determine total phenolic and flavonoid content and antioxidant activity. Furthermore, HPLC method was performed to identify selected phenolics in prepared samples. Probiotic viability was monitored by spectral flow cytometry (propidium iodide dye) and by turbidimetry. Mixture of selected probiotic cells and extracts were encapsulated into alginate particles to increase probiotic viability even under model digestion. Results: Matcha and moringa extracts obtained the highest content of phenolic compounds. Combination of extracts of moringa and young barley in interaction with probiotic cells during model digestion kept probiotic cells viable. However, antioxidant activity of polyphenols decreased rapidly during the digest procedure. Conclusion: To conclude, it was observed that matcha and young barley extracts show protective effect to enhance probiotic viability, which can be valuable for human diet.
