β-glucans are one of the most abundant forms of polysaccharides found inside the cell wall of bacteria and fungi. All β-glucans are glucose polymers linked together by β-glycosidic bond and they differ from each other by their length and branching structures. This types of polysaccharides possesses several physiological effects, including lowering plasma cholesterol level, control of postprandial glucose level, and immune modulation effects.Oyster mushroom shoewed the highest emounght of beta-glucans.Based on the tests performed, it is difficult to assess the reason for the cytotoxicity of mushroom extracts. The more pronounced effect of extracts on HaCat cells is apparently due to the fact that mouse melanoma cells grow faster and are substantially more viable than human keratinocytes.
