In this text we will discuss below emulsion systems based on oil, water, and surfactants, where surfactants are amphiphilic molecules. Those are composed of polar and non-polar parts, which reduce the surface tension. They can associate with other molecules and thus form aggregates/micelles above their critical micellar concentration.
