Original Abstract

An investigation was made to establish the basic relationship between the acoustic response of impact fruit to firmness, chemical composition and etylene production during of maturity and ripening of peach.The non-destructive acoustic impulse response technique was evaluated as stiffnes coeficient to measure of firmness. From the evaluation of etylene productin at begining of onset of climacteric ripening phase was stiffnes coeffitiet (S) ranged from 10-6 (Hz/g). Ripeng phase of fruit over ripe stage evaluated lowest value of Stiffnes coefficient.
